Cuban Pork Ropa Vieja

  • 9 oz. box Steak-umm® Cuban Style Seasoned Sliced Steaks
  • 2 tablespoons olive oil
  • 1 yellow onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 tablespoon minced garlic
  • 3 tablespoons taco seasoning
  • 15 oz can whole tomatoes
  • ½ cup pimento green olives, halved
  • Steamed white rice
  • Seasoned black beans
  • Cilantro to garnish
  1. In a large skillet, add olive oil and heat on medium-high. Add the onions and peppers and saute until softened.
  2. Add the minced garlic and cook for another 3 minutes.
  3. Add the taco seasoning and canned tomatoes. Reduce heat to low and simmer for 15-20 minutes or until the mixture has thickened.
  4. Meanwhile, cook Steak-umm Sweet & Zesty Cuban steaks according to directions on the box. 
  5. Combine the steaks with the vegetable stew and serve with steamed white rice and seasoned black beans. Garnish with cilantro.
