Cuban Empanadas
- 9 oz. box Steak-umm® Cuban Style Seasoned Sliced Steaks
- 1 package pie crust dough (2 rolls)
- ¼ cup diced yellow onion
- ½ diced bell pepper
- 1 cup shredded cheese
- Cooking spray
- 1 egg, beaten
- Preheat oven to 350F.
- Cook Steak-umm Sweet & Zesty Cuban steaks according to directions on the box. Set aside.
- In the same skillet, cook the onion and bell pepper until soft. Mix in with the beef and set aside.
- Roll out pie dough. Using a small bowl, cut out circles (about 3 per roll of dough). Continue cutting out circles until most of the dough is used.
- Lay out the dough circles. Add 2-3 tablespoons of the meat/veggie filling to the middle of each circle. Sprinkle each one with cheese.
- Fold the dough circles in half and press the edges together with a fork.
- Move the empanadas to a greased baking sheet and brush the tops with the egg wash.
- Bake for 12-15 minutes until golden brown.
- Can be served with salsa and guacamole.
