Smash Breakfast Tacos

Ingredients

  • 1 pkg Steak‑umms (100% Angus Beef)
  • 4 eggs, whisked
  • ½ cup shredded cheese
  • 1 cup prepared hash browns
  • ½ cup diced green & red peppers and onions
  • 4 tbsp butter, divided
  • 2–4 tbsp neutral oil (for hash browns and steak)
  • 4–6 taco‑size tortillas
  • 2 tbsp salt, pepper, garlic seasoning, divided

Instructions

  1. Heat a skillet over medium heat and add a little oil. Add the hash browns and cook until crisp and golden. Remove from the skillet and set aside.
  2. In the same skillet, add a bit more oil. Once hot, add the Steak‑umms. Chop them as they cook and season with some of the seasoning mix. When the meat begins to brown, add the peppers and onions. Sauté for 2–3 minutes, then remove from the skillet and set aside.
  3. Wipe out the skillet before assembling the tacos. Return it to medium heat.
  4. Add 1 tbsp butter to the skillet. When it starts to bubble, pour in just enough whisked egg to lightly coat the bottom of the pan. As the edges begin to set, sprinkle on some of the meat mixture and cheese.
  5. Place a tortilla directly on top of the egg and gently press down. Cook for about 1 minute, then flip.
  6. After flipping, add some hash browns, meat, and cheese to the other side. Fold it in half and cook until the tortilla is golden and the cheese has melted.
  7. Repeat the process until all tacos are made. Enjoy!
