Mini Steak Tacos

Ingredients

*Makes 10 tacos

  • 2 boxes of Steak-ummm sliced steaks (10 slices)
  • ⅓ cup onions chopped
  • 2 garlic cloves
  • 1 tsp salt
  • 1 tsp garlic powder
  • ½ tsp – 1 tsp chipotle chili powder
  • ½ tsp black pepper
  • Street taco flour tortillas
  • Your favorite pico de gallo
  • 10 oz of oaxaca cheese, shredded

Avocado salsa:

  • ½ of an avocado
  • Handful of cilantro
  • 1 jalapeno, deseeded
  • 2 garlic cloves
  • Salt & pepper to taste
  • Small chunk of a white onion
  • ¼ cup of water, plus more as needed

Instructions

  1. Add all ingredients to a blender and blend until smooth, adding more water as needed to reach your desired consistency. Taste and adjust seasoning if needed and refrigerate.
  2. Heat a skillet over medium heat and drizzle in a little neutral oil. Sauté the onion for 1-2 minutes until slightly softened. Add the garlic and cook until fragrant, about 30 seconds.
  3. Add the Steak-umm to the skillet. Using a spatula, chop it up as it cooks. Season with salt, garlic powder, onion powder, chipotle chili powder and black pepper. Cook, stirring occasionally, until fully cooked and well combined, about 8-10 minutes.
  4. Heat a skillet over medium heat and lightly coat with neutral oil. Place a tortilla in the skillet and sprinkle cheese over one half. Add a layer of the Steak-umm then top with more cheese.
  5. Carefully fold the taco in half, and cook until both sides are crispy and golden brown.
  6. Serve with avocado salsa and pico de gallo.
