Steak & Egg Breakfast Burritos

Ingredients

For the Burritos

  • 4 hash brown patties
  • 6–8 slices of Steak-umm Sliced Steaks
  • SPG (salt, pepper, garlic powder mix)
  • 3 eggs
  • 2 tbsp heavy cream
  • ½ cup shredded pepper jack cheese
  • ½ cup guacamole (see below)
  • ¼ cup chipotle crema (see below)
  • Queso, for serving
  • Large burrito tortillas

Homemade Guacamole

  • 2 avocados
  • ¼ cup finely diced red onion
  • ¼ cup finely diced jalapeño
  • 3 tbsp chopped cilantro
  • 1 tsp garlic powder
  • Juice of ½ lime
  • ½ tsp salt
  • ½ tsp black pepper

Chipotle Creama

  • 6 chipotle peppers in adobo
  • ½ cup Mexican crema
  • Juice of 1 lime
  • 3 tbsp chopped cilantro
  • 1 tsp garlic powder
  • ½ tsp cumin
  • ½ tsp cayenne pepper
  • ½ tsp salt

Instructions

  1. Preheat your griddle to medium high heat
  2. Add 4 hash brown patties and cook until golden brown
  3. Place Steak-umm down on the griddle and cook for 2 minutes each side. Chop into bite size pieces then season with SPG.
  4. Scramble 3 eggs with 2 tbsp heavy cream. Cook your eggs on the griddle until they are still slightly wet. Remove from heat.
  5. Assemble the burrito with guac, 2 hash brown patties, Steak-umm, eggs, shredded pepper jack cheese, chipotle crema.
  6. Tightly wrap the burrito then cook on both sides until golden brown.
  7. Cut the burrito in half then serve with warm queso and enjoy!
