Steak & Egg Breakfast Burritos


Ingredients
For the Burritos
- 4 hash brown patties
- 6–8 slices of Steak-umm Sliced Steaks
- SPG (salt, pepper, garlic powder mix)
- 3 eggs
- 2 tbsp heavy cream
- ½ cup shredded pepper jack cheese
- ½ cup guacamole (see below)
- ¼ cup chipotle crema (see below)
- Queso, for serving
- Large burrito tortillas
Homemade Guacamole
- 2 avocados
- ¼ cup finely diced red onion
- ¼ cup finely diced jalapeño
- 3 tbsp chopped cilantro
- 1 tsp garlic powder
- Juice of ½ lime
- ½ tsp salt
- ½ tsp black pepper
Chipotle Creama
- 6 chipotle peppers in adobo
- ½ cup Mexican crema
- Juice of 1 lime
- 3 tbsp chopped cilantro
- 1 tsp garlic powder
- ½ tsp cumin
- ½ tsp cayenne pepper
- ½ tsp salt
Instructions
- Preheat your griddle to medium high heat
- Add 4 hash brown patties and cook until golden brown
- Place Steak-umm down on the griddle and cook for 2 minutes each side. Chop into bite size pieces then season with SPG.
- Scramble 3 eggs with 2 tbsp heavy cream. Cook your eggs on the griddle until they are still slightly wet. Remove from heat.
- Assemble the burrito with guac, 2 hash brown patties, Steak-umm, eggs, shredded pepper jack cheese, chipotle crema.
- Tightly wrap the burrito then cook on both sides until golden brown.
- Cut the burrito in half then serve with warm queso and enjoy!
