Cook Steak-umm sliced steaks according to directions on the box. Cut into ribbons. Set aside.
Take each tortilla and fill with steak ribbons, ⅓ cup shredded cheese, and a drizzle of enchilada sauce. Place in a baking dish. Top all 3 tortillas with the remaining cheese and enchilada sauce.
Bake for 15-20 minutes or until the cheese is melted.
Remove from the oven and top with pico de gallo, sour cream, and chives.
